Soft chewy oatmeal cookies
Ingredients for about 20 cookies:
- oat flakes: 70 gr
- spelled flakes: 70 gr
- Corn Flakes: 40 gr
- sultanas: 20 gr
- dried cranberries: 20 gr
- hazelnuts: 40 gr
- whole wheat flour: 90 gr
- brown sugar: 50 gr
- baking powder: half a sachet
- eggs: 1
- seed oil: 90 ml
- maple syrup: 40 ml (or 2-3 tablespoons of honey)
- water: 2 teaspoons
Method of preparation:
In a bowl put oatmeal, spelled and Corn Flakes.
Stir and with your fingers lightly crush them so that they crumble.
To the cereal flakes add sultanas and dried cranberries. Add the chopped hazelnuts ( I suggest you whisk them until a grain).
Mix everything and add wholemeal flour, brown sugar, and baking powder.
Stir again. In another dish, beat the egg with a fork and add the oil to the wire, stirring constantly.
Also, add maple syrup and 2 teaspoons of water.
Pour everything into the cereal mix and mix.
You will get a sticky and not compact dough. Let stand for 30 minutes in the fridge.
After this time, pour the dough on a sheet of parchment paper, cover it with another sheet and roll it out with a rolling pin.
You will have to get a very thin layer.
Cut out the cookies with a pastry cup and place them on a baking sheet.
